We all know there are cans of the stuff lined up in the grocery aisle, but a big pot of the real thing cannot be beat. The scents fill the kitchen and even the steam from cooking is healthy for you when faced with the dry winter air. This WebMD article explains some of the common-sense benefits (link). If your supermarket offers prepared rotisserie chickens, they are a great way to speed up this meal (and countless others). Instead of cutting and cooking the raw chicken, add the rotisserie chicken meat at the end when adding the noodles. Leftover chicken works great, too!

To speed up the cooking process, skip chopping and adding fresh carrots step. Add a cup and a half of frozen carrots during the step when adding the noodles.

Lastly, though sacrificing some flavor (and nutrition), the step in which you saute the onions, garlic, and celery can be skipped altogether, and omit those ingredients along with the butter or oil will save you 5-10 minutes.

Classic Chicken Soup

Simple Classic Chicken Soup Recipe

Ingredients

  • 2 Tablespoons butter or cooking oil
  • ½ onion, diced
  • 1 large celery stalk, chopped
  • 1 large (or 8 baby) carrot, chopped
  • 1 clove garlic (finely diced or leave whole and remove before serving)
  • 1 pound chicken cut into approximately ½” chunks
  • 4 cups chicken broth
  • 2 cups of water
  • 2 cups dry egg noodles or 1 cup rice
  • 1/3 cup fresh parsley, minced (or 2 Tablespoons dried parsley)
  • 1 Tablespoon lemon or lime juice
  • Sea salt and fresh ground pepper to taste

Instructions

  1. In a large pot (link), add the butter or oil, onions, celery, carrots. Cook on medium heat until the onions are clear (approximately 5 minutes), stirring regularly to avoid sticking or burning.
  2. Add rice (if using) broth, water, and chicken. Cover and turn heat to high and bring to a boil.
  3. Reduce heat to medium and simmer until carrots are tender (approximately 5 minutes).
  4. Add the noodles (if using) to the broth, cover simmer until chicken (and rice, if using) is done (approximately 5 minutes). 
  5. Turn off the heat. Stir in lemon juice, parsley, and, salt and pepper to taste (fish out the garlic if left whole).
  6. Serve hot and smile.
