Crowd-pleasing Peas Recipe

Jazz up this a spring staple with my crowd-pleasing peas recipe. I think of peas as a spring vegetable (even though the vine in our garden is not ready until later in the summer), so to me, it makes sense to find ways to enjoy them right now.

In this house, we love onions and mushrooms. Even my kiddos love them. (Some times we have a bowl of sautéed mushrooms as a side dish. We do!).

This super easy and nutritious side dish will fancy up a weeknight dinner or even elevate a dinner for company.

Crowd-pleasing Peas Recipe

2 Tablespoons Butter
1 sweet onion sliced in 1/4 inch rings
8oz of sliced button or baby Bella mushrooms
3 cups frozen green peas
Salt and pepper to taste
2 oz shaved parmesan and asiago (optional garnish)

Melt butter in a sauté pan on medium heat.

Sauté the the onions for 5 minutes.

Add the mushrooms and continue to cook until the onions are soft.

Add the peas and cook for 5 more minutes, stirring occasionally. Do not over cook or scorch.

Add salt and pepper to taste and cheese garnish as desired.

Serve hot and enjoy!

We recently loved this crowd-pleasing peas recipe with a dinner of salmon on the grill and baked sweet potatoes. I think it would also be amazing with mash potatoes, gravy and sliced roast beef.
